This last week has been a HUGE eye opener when it comes to healthy eating. I consider myself to be a very healthy person 99% of the time (ok with the occasional dark chocolate nom noms) but this week we took it to new heights at the Santos household!
The reason? Hubby was unwell and had some unexpected surgery. To help his body heal we went on a very strict dairy free / gluten free / sugar free diet. Our meals were based on the paleo diet with lean meats, fresh Australian fish, loads of vegetables and fresh herbs to add flavour.
A daily green smoothie and a juice (assorted fresh organic fruits and veg) were also on the menu (as well as hubby having a stack of natural medicines to take of course – with me being a naturopath!)
Despite the ups and downs and surgery it turned out to be a great week! Felt absolutely a-m-a-z-i-n-g for the changes we made and my main man swears this is the healthiest he has ever eaten in his life (and yes a complete detox from coffee too!)
All of this got me seriously thinking about going Paleo. I have always been keen on the idea, and have been even more inspired since reading the work of Indi Nature’s Claire Yates, who I first connected with on facebook a little while ago. Her book is fabulous if you are looking for inspiring Paleo eats!
Here’s a couple of the delicious things I whipped up while eating Paleo this week!
Minestrone Soup….
Salmon steaks with basil, garlic and root vegetables….
Chicken, leek, mushroom and thyme hotpot……
Roast Lamb with rosemary and root vegetables…..
Green smoothie (spinach, strawberry, lemon, watermelon, vital greens and coconut water)
Juices galore (beetroot, pink grapefruit, watermelon, strawberry, lemon, orange)
Now that the week has passed, I am still more or less eating paleo. Although I have to admit I have been back on the carbs and eating legumes again (which are strictly not paleo!) I have to say, with my growing baby bump, maybe it’s ok to make exceptions.
